Love in the Time of Cholera is a book about patient love in the face of challenge and adversity. So, at these challenging times, I am attempting to retain my humor and balance. Hence: Food in the Time of Corona.

Along with my youngest daughter, Orielle, I am embarking on a week long, Cooking with Corona Beer Challenge. We are looking at cooking, baking, imbibing and sharing a few laughs and some (hopefully) good food with each other and with you too!

Day 1: Corona South of the Border Chicken! Doesn’t Corona Beer invoke sunny days on the beach with fresh lime sloshing inside an ice cold Corona? Unfortunately, most of us are not traveling to sunnier climes and spring breaks at this point are not what they used to be…

So, let’s bring these beachy, South of the Border flavors to our kitchen with this recipe!
